'The basic material for hard candy production is sugar, which accounts for 60% to 75% of hard candy. The problem to be solved in hard candy manufacturing is how to turn crystallized sugar into an amorphous solid. After sugar is dissolved in water, it changes from a crystalline state to an amorphous state, which needs to be dehydrated and concentrated. When pure sugar solution is dehydrated and concentrated, the final result is still a crystal. In order to obtain an amorphous or non-crystalline substance, a substance that can inhibit crystallization must be added. This substance can increase the solubility of the sugar solution and prevent the sugar solution from crystallizing when it is oversaturated. On the other hand, by increasing the viscosity of the sugar solution, the molecular movement of the sugar solution from rearranging into a crystalline form can also be slowed down.
